Vineyard
This Port is only made in vintages that we have long dry summers, when grapes reach their normal maturity early. Lyon Vineyard is where we source the fruit. Right at the foot of Mt. Konocti (our inactive volcano) the Syrah is grown under optimum conditions.
Winemaking
All of the fruit is hand harvested and quickly delivered to the winery. The grapes are de-stemmed and gently crushed to ¾ ton bins for fermentation. Temperatures peak at 87-90º F. Fermentation lasts six to seven days and the grapes are on the skins for a minimum of two weeks. We arrest the fermentation using grape neutral spirits leaving 8% Residual Sugar and 21.5% alcohol. After pressing the wine is placed into barrels with oak from Oregon, Hungary and the Eastern United States. We like to have about 30% of the barrels new and age the wine for a few years before release.
Tasting Notes
True to traditional Port characters, this wine depicts a chocolate edge with dark plum characters, good natural acidity to balance the sweetness and a touch of oak on the lingering finish.

This Port is the perfect dessert wine for the chocolate lover. On its own or paired with the most decadent dark chocolate cake or a combination of blue cheese and walnuts, this Port is a delicious night cap.
