CABERNET FRANC ROSÉ
LAKE COUNTY
The Cabernet Franc grown to make this Rosé came from the Silva family vineyard a few miles from the Winery. The vineyard is one of the most well manicured vineyards I’ve seen, not a cane out of place. The Cabernet Franc grown there is of exceptional quality.
A forty-eight hour cold soak of the Silva Cabernet Franc is how this Rosé began. Beautiful pink juice is drained off by gravity and yeast is added to ferment in a separate stainless tank. It is aged for 2 months on neutral oak and then bottled. The result is a crisp, refreshing Cabernet Franc Rosé.
This wine is the perfect apéritif to wet your palate with a board of Gouda, Provolone cheeses and Parmesano Reggiano for a twist. The lively fruit flavors, and earthy undertones also makes this a perfect pairing for a grilled Mahi Mahi with mango salsa, or even a pasta and duck breast salad adorned with dried cranberries. The Cabernet Franc Rosé is a crowd-pleasing wine that pairs well with a wide range of foods. Enjoy!
