Riesling vines are generally hard wooded which means they can withstand colder winters. The Devoto Vineyard where our Riesling comes from is in one of the cooler spots in Lake County. This allows our Riesling to ripen fully and still hold on to the natural acids that balance the wine.
Winemaking for this varietal is fairly straightforward. The grapes are delivered in the coolest part of the morning and are crushed and pressed off the skins. The juice is then settled for 24 hours and racked off the lees. The fermentation begins at a cool 50 degrees and finishes up about 4 weeks later.
Riesling is one of the most versatile wines. It goes well with spicy Thai food as well as many spring salads and delicious cheeses. Ours is an off-dry style, with aromas of minerals and orange blossoms, which makes it suitable during or after a meal.
